Our Bafun Uni is sourced from the renowned Uni producing region of Hokkaido, Japan, where petite green sea urchins with small, vibrantly yellow and orange roe referred to as "tongues" are carefully harvested. Available in three exquisite presentations, the most sought after being the Narabi "Jou" trays, where tongues are arranged in parallel, showcasing their stunning color and structure transparently. Only the highest grades of Uni are suited to this presentation, as any imperfections would be noticeable.
